What’s Cookin’, Good Lookin’?

March is National Nutrition Month. It seems like a perfect time to put away the heavy stews and casseroles of winter (um, and the sweatpants that go so nicely with them), and check back in with menu planning and plotting trips to the farmers markets that should be in full swing later this month.

Yes California, not all of us have year-round access. ;-)

Speaking of that, to find farmers markets and organic options near you, check out the great folks at Local Harvest.

So, my dear readers, I would love to know your favorite healthy recipes. In the comments section below, share a recipe you think other readers would enjoy.

Bonus points if it is kid friendly!

  1. I make lots of kid friendly seasonal dishes with children in Columbus Ohio at my Kids Cook classes. Two of our favorite healthy recipes are green monster smoothies and baked kale.   3. Great idea Bethe. My family’s favorite is a very simple soup – 4 cups chicken stock, 1- 2 cups baby bok choi (cleaned and sliced), 1 cup frozen corn, 1 can of black beans (rinsed). Really quick, really easy, and goes great with any kind of bread, cornbread, or biscuits and some cheese.

  4. My waterless slo-cooker makes a GREAT and healthy chicken :) Just throw in whatever veggies you want, toss in the chicken, season if you want. Let it cook on low for the afternoon. Then you end up with a wonderful chicken dinner at the end.

    It also shreds beautifully when you slow cook it, so you can use leftovers for soft tacos, etc.

  6. Love this! And you already have some great recipes. One of our favorite meals to make together is pesto pasta, chopped salad and whole grain rolls. My six and two year old put the pesto ingredients into the blender, put the salad ingredients into the bowl and toss when the dressing is made and added. They love to help and are always coming up with different salad “recipes.” I think one key to instill good eating habits is preparing nutritious meals together and,of course, model good habits.

    Here’s the pesto recipe we love:

    Fresh organic basil
    1/2 cup of organic extra virgin olive oil
    1/4 cup of grated reggiano parmesan
    3 tablespoons pinenuts
    3 small cloves of organic garlic

    Blender ingredients then mix into you favorite prepared pasta (organic whole grain). This is one of our favorite Meatless Monday meals!

    As a single mom of two girls, I had a lot of quickie recipes in my book. I titled them, then added ‘My Way,’ because they frequently were not traditional.

    Frito Pies My Way

    This is great for kids that are starving, since you can have everything ready to throw in a bowl.

    Ground beef, browned (we use buffalo, but don’t know it’s availability everywhere)
    Can of organic pinto beans
    Fritos (or healthy organic corn chips)
    Cheddar Cheese (we eat Tillamook only)
    Frozen organic corn

    Put a handful of chips in the bottom of a bowl. Top with meat, hot beans, cooked corn, then shredded cheese. Serve.

    My kids do not like lettuce, tomato or hot sauce, all of which make a Frito pie a Frito pie. So this is my kid-friendly and super-fast version!

    My other quickie favorite dinner is:

    Coq au Vin My Way

    In a cast iron Dutch Oven, I put a whole cut-up chicken, three or four quartered potatoes (one for each person), a bag of baby carrots, a thickly sliced onion, and a couple tablespoons of water. Cover. Put in a 375 oven for 45 minutes, then take off the cover, and bring the chicken to the top. Put back in the oven uncovered and let the chicken brown for another 10-15 minutes. Serve with greens (kale, chard, spinach, whatever). My kids request this a lot and, it was our Christmas dinner last year……

  13. Mine is almost a non-recipe, but when my daughters were little, they liked helping make this for any meal (or snack):

    Yogurt “sundaes”

    1 custard style yogurt, any flavor (app 6 oz)
    banana, sliced
    1 tsp wheat germ/granola
    jam or chocolate syrup topping

    Layer in a bowl over the bananas and eat. Ta da. Protein, carbs, fruit…happy kids.
